El motmot is named after a beautiful local bird found in the region of Chiapas in Mexico. This coffee is decaffeinated using the Mountain Water Process which involves sourcing natural mountain water from Pico De Orizaba. The decaffeination process involves immersing green coffee beans in cold mountain water to extract caffeine, resulting in beans that are 99.9% caffeine-free while maintaining full flavour. The beans are gently steamed and then soaked in water saturated with coffee flavour compounds. This process preserves essential flavour elements. Afterwards, the beans are dried, analysed, and tested.
