The Flores family has been producing coffee since the 1970s, originally in the Cajamarca region of Peru. In 2009, they relocated to the San Ignacio province and established Finca El Morito, focusing on innovation and quality. Over generations, they have expanded their operations, creating a close-knit community of producers, with 70% of the coffee coming directly from family estates. Their commitment to excellence has earned them recognition in the Cup of Excellence auctions, including in 2022.
One of the key figures in the farm is Lenin Flores, a third-generation coffee grower responsible for quality control and specialty coffee production. He plays an entrepreneurial role, supporting his community while excelling in roasting and cupping.
Their micro-lot coffee, made from Bourbon and Caturra varieties, undergoes a meticulous double fermentation process to enhance sweetness before drying for 20-25 days. The result is a bright and complex cup with notes of lemon zest, papaya, dried dates, and sencha, offering a balance of citrus vibrancy, tropical sweetness, and delicate tea-like characteristics. The final product is carefully roasted and evaluated at their lab in Jaen to ensure exceptional quality.
