Sebastian Ramirez is a fourth-generation coffee farmer with over 12 years of experience and has established himself as one of the most famous specialty coffee producers in Colombia.
Sebastian is a big fan of Pink Bourbon, continuously reinventing his methods and equipments on his farm to highlight its floral and sweet notes. His washed process is one of the cleanest and most balanced in his portfolio. This particular coffee undergoes anaerobic cherry fermentation for 48 hours. It is then pulped before being washed and dried for approximately 20 days.
This coffee is the fruitiest and silkiest natural coffee you will ever experience. Sebastian himself describes it as well-balanced, with an amazing body and a mix of fruit punch and chocolate flavours. The unique flavour profile is achieved through a process called carbonic maceration, which involves fermenting the coffee cherries in CO2-filled containers at a controlled temperature. The coffee is then dried until it reaches 11% humidity. All of this takes place at the processing facility built by Sebastian Ramirez on his main farm which processes his entire annual production.
