This anaerobic washed Pink Bourbon variety is produced by the COE winning estate of Finca El Diviso by Linarco Rodriguez. The farm has been with the Rodriguez family for approximately 60 years, passing from his grandparents to his parents and now to Linarco.
This coffee is harvested following strict ripeness criteria, floated and hand-sorted to remove any defects. Cherries are then exposed to 30 hours of underwater fermentation before being pulped. The parchment is then gently washed and dried in temperature controlled conditions until ideal moisture content is achieved. This micro-lot is 100% Pink Bourbon. A wonderful example of the floral and sweet nature of the variety. Intensely sweet, floral and silky smooth. This coffee is super clean and performs well in all brewing methods. There's a reason why this farm has won Multiple COE awards and it shows in this coffee.
